Ingredients

Sauce One

  • 500 ml/18 fl oz best-quality plain yoghurt
  • 1 heaped tbsp tomato purée
  • ½ tsp Turkish chilli flakes

Sauce Two

  • 1 cucumber, peeled, deseeded and grated
  • 500 ml/18 fl oz best-quality plain yoghurt
  • a handful of chopped rocket
  • chopped fresh dill
  • chopped fresh parsley
  • sea salt

Method

Whisk all the ingredients together and chill until required.

Put the cucumber in a colander, sprinkle with sea salt and leave to drain for 30 mlnutes-1 hour (this gets rid of excess moisture). Pat dry on kitchen paper, then mix with all the other ingredients.
