  • 3 tablespoons cumin seeds
  • 2 tablespoons coriander seeds

Method

  1. Dry roast the spices and bay leaves in a frying pan over a low heat, stirring until you can smell the spices. Remove from the pan and allow to cool slightly.
  2. Transfer the mixture to a coffee grinder or food processor and grind to very fine powder.
  3. The masala can be kept in an airtight container or it can be frozen in a bag.
