It is worth going to a specialist (Asian) store and buying the most expensive long grain rice you can find for this dish.

Ingredients

  • cups long grain rice, washed under running water for at least 15 minutes and strained
  • salt
  • ghee
  • vegetable oi

Method

  1. Boil the rice in plenty of salted water, giving it one quick stir once it has come to the boil. Continue cooking until the grains are just tender. Drain thoroughly, transfer to a bowl and stir in a heaped tablespoon of ghee. Set aside.
