Oh, Indian bread is so delicious but it’s unrealistic really and truly for us poor Westerners to achieve the authentic taste because we don’t have the tandoor oven. Should you wish to purchase one, I tell you how.

Ingredients

  • oil
  • 1 teaspoon cumin seeds
  • 50-60 g/2-2½ oz

Method

  1. Heat some oil in a karai or frying pan, add the cumin seeds and fry until they crackle.
  2. Mix the cumin seeds, spinach, flour and salt to taste and add enough water to make a tight dough.
  3. Divide the dough into six portions and roll each one into a small ball, then shape them into discs with a diameter of 15-20 cm/6-8 inches.
