This is simple, quick Indian cooking at its best - a tasty dish that enables you to enjoy spicy, crunchy green beans that have not had the goodness boiled out of them in gallons of salted water. It should be awarded two yum yums!

Ingredients

  • vegetable or coconut oil
  • 20 g/¾ oz cumin seeds
  • 300

Method

  1. Heat some oil in a pan, add the cumin seeds and cook until they crackle.
  2. Add the potato cubes and onions and stir-fry until they are slightly colouring, then add just a tiny drop of water and cook until the water has evaporated and the potatoes are al dente.
  3. Stir in the chopped beans without adding any more water, then stir in the chopped dried
