Use a small non-stick omelette pan for this spicy omelette.

Ingredients

  • 2 large fresh eggs
  • salt and pepper
  • vegetable oil
  • 1 teaspoon choppe

Method

  1. Thoroughly whisk the eggs and season with salt and pepper.
  2. Heat a little oil in the omelette pan and quickly stir-fry the chilli, tomato, onion and coriander. Then pour the beaten egg evenly over the pan and cook until the omelette is set. Using a spatula, fold the omelette to make a half-moon shape and serve at once.
