This splendidly refreshing drink was made for me by Pritam, the excellent bartender of the Trident Hotel in Udaipur.


  • 1 teaspoon very, very finely chopped deseeded green chilli
  • 1 teaspoon very, very finely chopped fresh mint


In a suitable glass, put the green chilli, mint, lime juice, sugar syrup and ice. Top up with the pineapple juice and stir well. Serve garnished with a mint leaf and a lime slice. Delicious.
