A fine lunch dish for those warm summer days is a piping hot fresh fish soup. This Italian version is simple and quick to prepare. You will probably need one or two kilos of strong-flavoured, firm-fleshed fish, for example, eel, monkfish, octopus, red snapper, large prawns or dogfish. You can use any fish you like, there are no rules and the best way to do this is to wander around a busy fish market and become inspired.
