Floyd's Tasmania on a Plate

If you find yourself in Australia it is worthwhile taking a trip to Tasmania. Although it looks like a little island on the map, it is about the same size as Ireland. It is pretty, unspoiled and fun. Unusually for me, I had a successful day's fishing and caught eight large tuna. The owner of the boat gave me one and I took it to Mures Restaurant in Hobart and prepared this dish.
