  • ½ cucumber, peeled and thinly sliced
  • 1 teaspoon salt
  • 150ml/

Method

Spread out the cucumber slices and sprinkle with the salt, then leave for 20 minutes or so. Rinse in a colander and drain well, then pat dry with kitchen paper. Put into a serving dish and stir in the yoghurt. Garnish with coriander leaves or parsley.
