This is a classic example of the French people's ability to make tasty, satisfying, yet economical dishes. And you don't have to be a genius to prepare and cook this one.


  • 300g/10oz lean pork, minced
  • a small handful of parsley, chopped


Mix the pork, parsley, 1 garlic clove, salt and pepper together and distribute evenly between the slices of beef. Roll up and tie with string or secure with a wooden cocktail stick.

Fry the remaining garlic in the oil with half the tomatoes in a large saucepan or deep frying pan. Add the meat parcels and brown carefully. Flame with the Cognac and sprinkle with the flour. Mix the flour w
