Wild boar has a deeper, richer, more gamey flavour than the domestic pig. Generally in Britain wild boar is difficult to obtain and very expensive. However, farmed boar is an acceptable alternative. You can use a leg of pork, but you should increase the marinade time to forty-eight hours as opposed to the twenty-four hours I recommend for wild boar.
