Ah! The poor sweetbread, reviled by the British population – those with long memories, that is – who still regard all kinds of offal as either a penance, illness or poverty, esteemed in Europe and endangered by the bland grey bureaucrats of the EU. Sweetbreads simply sauteed in sizzling golden butter, seasoned with lemon juice and garnished with capers is a French classic. Here's another from Hungary.
