I like this dish so much that when I go to stay with my friend Khun Akorn at his magnificent Tong Sai Bay Hotel in Koh Samui I have it for breakfast, I have it for lunch and I have it for supper. What is so enjoyable are the spicy and flavoursome slivers of pork among the chunks and strips of fresh raw pineapple, spring onions, cucumber and tomato. The crunchiness and sweetness of the vegetables contrasts exquisitely with the spiciness of the rest.
