Although it is many years since we filmed Floyd on France, people still gleefully mock me about this dish. I was cooking it for an imperious French lady who, observing my culinary skills with dismay, horror and incredulity, told me very clearly that I did not know what I was doing. In fact, the recipe does work, is good, and Madame still sends me a Christmas card each year.
