Whisk Marsala with egg yolks and sugar for a frothy dessert or, indeed, a pick-me-up for those under the weather - Zabaglione!
This is simple to make but quite hard work. Your whisking hand needs to be in good shape.
Whisk together the egg yolks and sugar in a bowl. Place the bowl over a pan of gently simmering water. Pour in the Marsala and whisk like hell until you have a smooth, frothy, thick custard-like mixture. Serve immediately in glasses with sweet biscuits.
