  • 2 free-range egg yolks
  • 1 tablespoon sugar
  • 1 vanilla pod

Beat the egg yolks lightly in a bowl. Heat the sugar with the vanilla pod and milk in a pan until hot but not boiling. Remove the vanilla pod and whisk the mixture into the egg yolks. Place the bowl over a pan of hot water or place the mixture in the top of a double boiler and cook, stirring constantly, for about 20-25 minutes, until the custard thickens slightly and will coat the back of a spo
