Ingredients

  • 450 g (1 lb) smoked cod’s roe
  • 4–6 garlic cloves, crushed

Method

Put the cod’s roe, garlic and breadcrumbs into a food processor or blender and whizz together until smooth. Add the lemon juice, and then slowly dribble in the olive oil, with the motor running, until you have a smooth, creamy spread. Add a bit of salt and white pepper, if you need to. Serve with fresh bread.
