Place a large heatproof bowl (metal, if you have one) over a pan of simmering water. Add the egg yolks, sugar, wine and aquavit, and beat with a balloon or spiral whisk until the mixture is really thick, frothy and glossy - this will take about 5 minutes. Let the mixture cool for just a few moments while you arrange the fresh fruits on ovenproof plates or in shallow bowls.
