It was a bizarre experience travelling hundreds of metres underground, into one of the world’s largest iron mines, to find a retired miner growing shiitake mushrooms on birch mulch in a disused part of the mine. It was even stranger cooking these mushrooms in front of bemused miners sitting in the works’ canteen, scoffing huge slabs of meatloaf at the end of their shift. Needless to say, any type of mushroom goes well with this dish.
