This is brilliant, for example, with prawns, hard-boiled eggs, or cold chicken but my wife likes to dip her chips into it.

Ingredients

  • 4 cloves of garlic, peeled
  • 2 egg yolks
  • Pinch of salt

Method

To make this by hand, crush the garlic really well until completely pulverised. You can do this with a large pestle and mortar, or on a chopping board, scrunching the garlic cloves down with the flat part of a large cook’s knife; then put them into a large bowl.
