Heat the oil in a saucepan and throw in the onion and garlic. Fry these together for about 5 minutes over a medium heat until they have softened, but don’t let them brown.
Tip all the other ingredients into the pan, heat gently and simmer for at least half an hour. Leave off the lid so that the liquid reduces and the flavour concentrates. Check the seasoning, adding a few shakes of salt
