Irene España and her son Andrés Vidal, who run a hotel high up in the Pyrenees, were so taken by this dish that they decided to put it on the menu at their restaurant Casa Irena, which, incidentally, is favoured by the King, Juan Carlos. So who knows, by the time you read this, the King of Spain himself might have eaten one of my dishes.
