Chop off the stalks from the artichokes and strip off their tough outer leaves. Now quarter them, and if there is some hairy choke to be removed do it with a small, sharp knife. Drop the pieces of artichoke into a large bowl of water to which you have added the lemon juice. Do this as you go along to stop any discoloration. When you’ve prepared all of them, you can pour away the water and drain
