Green pimientos, a great delicacy often served for tapas, are small green peppers about the size of pullet’s eggs, which are dredged in flour, quickly deep-fried and eaten whole with lots of sea salt. I used to eat them by the plateful, especially when I was having one of my non-meat days as I do from time to time. If you can’t find the little ones, a passable substitute can be achieved by cutting up the big peppers.
