  • 675g (lb) new potatoes, scrubbed (but not peeled)
  • 4 tablespoons olive oil


Cook the potatoes in plenty of boiling, lightly salted water until they are tender. Drain them well, then cut into bite-sized pieces.

Mix together the oil and sherry or wine vinegar with a little salt and pepper. Add the garlic mayonnaise and mix in most of the paprika. Add this to the potatoes while they are still warm — this way they will absorb the flavour of the dressing wonderfully
