This is a brilliant garnish for any grilled meat or fish.


  • 15 cloves of garlic, peeled
  • About 1 wineglass dry white wine (enough to cover)
  • 4


Put the cloves of garlic into a small saucepan and pour over the wine. Simmer gently for about 3 minutes, then drain the garlic and dry on kitchen paper. Heat the oil in a frying pan and toss in the cloves of garlic, frying them briskly until just golden. Heady stuff!
