Churros are delightful little confections of light batter, deep-fried, sometimes dredged in sugar and sometimes eaten with salt as a savoury niblet. They are like a very, very light doughnut, only they are not, and are similar to the beignets you find in France. They are popular at breakfast time, dipped into coffee or chocolate, and they are also found on street stalls at fiestas. They do not keep well and should be eaten at once.
