This kugel makes a great main dish and is suitable for diabetics. Serve it with Almost Sour Cream! or yogurt and berries.

Ingredients

  • 1 pkg (12 oz/375 g) medium or broad noodles (yolk-free are fine)

Method

Cook noodles according to package directions. Drain and rinse well. Return noodles to saucepan.

Steel Blade: Process eggs with cottage cheese until blended, 12 to 15 seconds. Add to noodles along with remaining ingredients and mix well. Pour into sprayed 9- × 13-inch glass baking dish.
