Finely grated raw potatoes make an unusual topping for this version of shepherd’s pie. Tried and true!
For meat mixture: In a large nonstick skillet, cook meat on medium heat about 4 to 5 minutes, until it loses its red color, mashing it to keep it crumbly. (Or microwave, uncovered, on High for 5 minutes, mashing meat once or twice during cooking.) Add remaining ingredients for meat mixture; mix well. Place in sprayed 1-quart shallow casserole.
For topping: Process potatoes, onion and eg
