Thanks to Omi Cantor of Boston for suggesting this easy company casserole. I modified her recipe by reducing the fat, changing a few ingredients and simplifying the preparation.

Ingredients

  • ½ cup dried apricots
  • 3 cups Passover apricot nectar (or cups

Method

Preheat oven to 375°F.

Steel Blade: Process apricots with 6 to 8 quick on/off pulses, until coarsely chopped. Place in large microwavable bowl with remaining ingredients except sweet potatoes. Heat until boiling, 8 to 10 minutes on High.
