“Gorditas,” or “little fat ones,” are a kind of thickish tortilla popular all over Mexico that is often fried rather than griddle-baked. The usual gorditas puff up enough in cooking to be completely or partly split and filled with anything from fish hash to shredded cheese. This interesting variation is from Tuxtepec, near the northernmost tip of Oaxaca State, and probably migrated there from the neighboring state of Veracruz.
