“Turnovers” is really not an exact translation. Molotes, a popular filled masa specialty of Oaxaca, are most often formed into a shape between a “French twist” (as close as I can get to the literal meaning), a long Italian roll, and a big misshapen cigar with tapered ends. However, other shapes are also known, and I have opted for simple half-moons rather than the more characteristic shape.
