In Oaxaca City everyone seems to gravitate to the magic square of the Zócalo the big tree-shaded town plaza surrounded by gracious portales (arcades). The Hotel Marqués del Valle, named for Cortez, occupies part of one side. It was there that I tasted this marvelous dish on my first trip to Oaxaca. The taste lingered in my memory, and ten years later I finally succeeded in obtaining the recipe.
There is no good English word for Maquiles. The dish can vary a lot
