Dried beans are one of the core foods in the Oaxacan diet—and no wonder, since the beans are so fine. I did not find a panoply of exciting, unusual dishes. That is not the Oaxacan way. People seldom stray far from the plain, simply cooked beans that are a part of most meals. It’s the beans themselves that give the good flavor. Black beans are the most popular, especially a very large variety called ayocotes that I’ve even seen in New York.
