As common in Oaxaca as our cucumber-shaped zucchini is a type of zucchini as round as a little melon. This is what would be used for stuffing, since it’s easy to scoop out while keeping the shape intact. Something like this is sold in the U.S. under the name roly-poly squash; if unable to find it, substitute another type of summer squash such as pattypan, regular zucchini, or yellow squash.
