Chilacayota is a kind of squash with a mass of “strings” inside, much like U.S. spaghetti squash except that it is round instead of oval. I have seen them in Latin American stores in the boroughs of New York, but I assume that most people will be making the recipe with spaghetti squash.
This is one of the most beloved aguas frescas in Oaxaca City. Be sure to use fresh pineapple—the canned fruit is much too sweet.
