A simple sweet atole is customarily flavored with canela. I prefer to bring out the cinnamon flavor by simmering sticks of canela in water, then adding the masa harina to the hot infusion as directed below. The mixture will not be as smooth-textured as an atole started with cold water, so I like to strain it before serving.
