Layered Cake with Almond Filling

Antes are one of the great Spanish-descended traditions in Oaxaca. They are very, very sweet layered compositions based on the sponge cake-like Marquesote and every kind of filling—preserves of sapote and other tropical fruits, candied coconut, or the almond mixture given here.

This can be made in 6 layers as suggested for Sopa Borracha.
