This quesadilla is not related to the familiar snack of the same name that consists of a folded tortilla or envelope of masa enclosing a melted cheese filling. It’s a cake-like bread or bread-like cake made with rice flour and given a zestful accent with air-dried cheese of the cotija type. In Ixtaltepec, the town of the Isthmus where I encountered this unusual specialty, I found it being baked in round wooden cheese molds or dark metal loaf pans and served in wedges. I
