Savory empanadas such as Empanadas de Sardina are popular in Oaxaca, but sweet empanadas, both fried and baked, are more common. Some are associated with particular religious holidays. The usual fillings are very rich and sweet: Two typical ones are the candied coconut used in Carlitos and the classic pastry cream, Lechecilla.
