This very simple dessert requires ripe but not super-ripe plantains and the unique Mexican cultured cream called simply crema. If you can’t find crema, don’t try the dish—no other form of sour cream has the right flavor. You will understand when you taste it.

Leave the plantains whole in the skin. Heat a heavy griddle or large castiron skillet over medium heat until very hot. Place the plantains on the griddle and cook for about 25 to 30 minutes, turning once or twice to sear evenly on both sides. The skin will become slightly papery and may split; this doesn’t matter.
