Tamarind is not native to Oaxaca but was brought by the Spanish from Asia. It has a tart, invigorating flavor that is extremely refreshing in hot weather. The pureed frozen pulp is stocked in Latin American and many Asian groceries.
The recipe will work equally well with any kind of fruit pulp from peach to papaya, but always taste to adjust the amount of sugar syrup according to the natural sweetness of the fruit.
