Actually, my first encounter with this famous dish was as a child visiting Tijuana with my uncle Ernie. We ate carnitas at a restaurant that was like a thatched hut with open sides. In my college years I found that it is one of the great spécialités of Jalisco.

Four pounds of pork may sound like a lot, but it will shrink tremendously as the fat renders juice is my own addition.
