I hadn’t thought about this chewy confection for years until I was working on the Guadalajara recipes for this book and suddenly had a memory of it in an ancient notebook from the Instituto Familiar y Social. Sure enough, there it was, just as I remembered it—dense, very sweet, but a little fruity from the dates.

The original recipe was all in metric weight and volume measurements.
