One of my two favorite aunts, my Tía Panchita Ellis, taught me to make this sauce long before I thought of cooking professionally. Tía Panchita is slightly eccentric, totally lovable, and a fabulous cook. She entertains a lot and insists on total organization and minimum fuss.
