This is a versatile basic recipe that works well with any seafood. Cooked fish and shellfish in this type of vinegar marinade are a favorite preparation in Veracruz. In the North, my grandmother used to make something very similar with mountain oysters, and they were delicious. In Mexico it is usual to serve this sort of appetizer with saltines.
