This is a good dressing to experiment with. It would be great with a grilled duck salad or any green salad.


  • ½ cup red wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon


In a medium-size bowl, whisk together the vinegar, garlic, oregano, chiles, salt, and pepper. Add the olive oil a little at a time, whisking well after each addition.

Can be stored, tightly covered, in the refrigerator, 2 to 3 days.
