Be sure not to use chili powder (a Tex-Mex blend of spices) instead of pure powdered chile, or your corn will faintly resemble a chili cook-off! If powdered red chile is not available, use a small amount of good-quality cayenne pepper or red pepper flakes (start with 1 teaspoon and add more to taste). If using a food processor, be sure butter is well chilled and don’t overprocess, or it will become greasy.
