I developed this recipe one lazy afternoon when I had a surplus of pears. It is a variant on a side dish that my cousin Hector makes with cling peaches. I have since tried the formula with apples and quinces with equally good results. Tightly covered, they keep for weeks in the refrigerator and make a nice addition to a holiday buffet as a side dish with pork, turkey, or brisket.
